Carrageenan has strong stability, and the dry powder is not easy to degrade after long-term storage. It is also stable in neutral and alkaline solutions, and will not hydrolyze even when heated, but in acidic solutions (especially pH ≤ 4.0) carrageenan is prone to acid hydrolysis, resulting in a decrease in gel strength and viscosity. It is worth noting that under neutral conditions, if carrageenan is heated at high temperature for a long time, it will also hydrolyze, resulting in a decrease in gel strength. All types of carrageenan dissolve in hot water and hot milk. When dissolved in hot water, it can form a viscous transparent or slightly milky white free-flowing solution. Carrageenan can only absorb water and swell in cold water and cannot dissolve.
Applications of carrageenan:
1.Food industry:Carrageenan can be used as gelling agent, thickener, stabilizer, suspending agent and clarifier, and can be used in products such as soft candy, jelly, sausage, canned meat, ice cream, beverage, condiment, milk, bionic food, jam, canned thick soup, beer, bread, pet food and so on;
2.Pharmaceutical industry:It can be used as medicine suspending agent and dispersant, and can be used to produce capsule products etc.
3.Daily chemical industry:It can be used in toothpaste, detergent, cosmetics and air freshener;
4.Biochemistry:Carrageenan can be used as carrier of microorganism and immobilized cells;
5.In other fields:It can be used as the thickener for waterbased paint, ceramic glaze and water color, and the suspending agent for graphite, sizing material for textile products and paper, and the suspending agent for herbicide and pesticide, graphite deflocculant, deflocculant for textile and so on.
